Campbell Christmas Cookie Tradition



One of Raynor's fondest memories of Christmas was the tradition that his family had of baking and decorating Christmas cookies.  This year, we decided we wanted to adopt this tradition into our brand new family!  I know it seems silly to start a tradition when Kylar is only 4 months old and she probably wont even remember this whole process of making cookies, but she sure did like the tasty cream cheese icing! ;)  {Grandpa wanted to see how she would like it!} The whole process tooke 2 days and we had lots of fun decorating the cookies together as a family.  Maybe next year Kylar will be able to enjoy it more too!  Here are the recipes for the cookies and icing:

Sugar Cookies:

4 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
2 tsp. baking powder
1 cup shortening or butter
2 cups sugar
4 eggs unbeaten
2 tsp. vanilla
2 Tbl. milk if butter is not melted

1. Blend ingredients and let dough chill overnight
2. Roll out and cut with cookie cutter
3. Bake at 350 degrees for 10 minutes
4. Let cool and ice with cream cheese icing

Cream Cheese Icing:
8 oz. cream cheese
1/2 to 1 stick of melted butter
1 tsp. vanilla
food coloring
2 1/2 cups powdered sugar

Yum! This is a great treat with a cup of Spiced Tea!
Spiced Tea Recipe:

2 cups Orange Tang
2 1/2 cups sugar
3/4 cup Tea (Lipton Instant Tea)
2 scoops Lemondae mix
2 tsp. cinnamon
1 tsp. cloves
1 tsp. nutmeg

Mix all of the ingredients together and when you are ready for a cup of spiced tea, put 3 heaping teaspoons of mix in a cup of hot water.
